Baked Cheesy Garlic Zucchini


I made this delicious cheesy garlic zucchini very easily in the oven. All you have to do is preheat the oven to 400 degrees. Then, take one whole zucchini and cut it into fourths - once in half and then in half again long ways. Rub a little vegetable oil on the tops, then sprinkle on garlic salt and parmesan or mozzarella cheese, or really whatever cheese you prefer. Bake in the oven for 15 minutes and then enjoy!

Chicken Rice and Asparagus

Today I made a chicken flavored rice with asparagus and it was DELISH!


Here's how you make it:

Ingredients (for one serving):
       1 1/2 cups Fat Free Chicken Broth
       1 cup White Rice
       1 Tbs Vegetable Oil
       4 stems of Asparagus
       1/4 tsp Seasoned Salt

Cut the asparagus into one inch sections. On stove top in one skillet, put 1 cup chicken broth and boil. Once boiling, add in the white rice and simmer on low for 5 minutes. While the rice is simmering, put in a separate skillet the vegetable oil, asparagus, and the remaining chicken broth. Cook on medium heat for two minutes. Sprinkle the seasoned salt over the asparagus and cook for two more minutes. Drain the left over chicken broth from the rice and the asparagus. Combine the rice and asparagus and add more seasoned salt, if desired.

Vanilla Apple Flatbread

I just came up with a pretty easy but tasty concoction today for lunch. It is incredibly healthy.


All you need is:

1 apple, thinly sliced
Vanilla Greek Yogurt
1 Whole Grain Sandwich Flatbread


All I did was lightly toast the flatbread to make it a little stiffer. Spread a bit of the vanilla greek yogurt on one side of the flatbread and lay slices of apples on top. The result is delicious!

Wedding Planning Thoughts

There are a little less than 6 months before my wedding (October 20, 2012) and I never realized how much planning goes into an event like this. I realize that I am not anywhere close to done, but somehow I have not freaked out once. Since a lot of people are probably in my shoes right now, I wanted to share a few tips on how I keep it all together...

1. In the end, it's not about the wedding, it's about the marriage. Too many people get wrapped up in the planning and making sure everything is perfect, down to the last detail. Don't forget to enjoy the time you are engaged growing together and that at the end of the day, that is the person that matters the most on this earth and the one you are going to be with for the rest of your life, not just through that one day.

2. This is YOUR wedding. It's great to get suggestions from others because they can show you new perspectives that you were overlooking. However, don't crack under the pressure of what everyone else wants for your wedding. You only get one chance to have the wedding you want, so make sure it's what YOU want, not just what everyone else wants.

3. Go days (or a week) without thinking about the wedding. It's really going to be okay if you are not thinking about or planning the wedding every second of every day until the day of the wedding. You need to have some days to take a break from the planning or you will drive yourself insane.

4. Find your support system. Whether it is your family or your best girl friends, you can't forget the importance of having people to share this process with. They will be a great source of support and encouragement, whether it be giving an opinion, doing tedious tasks like tying bows and addressing envelopes, or just being there when you need someone to vent to.

5. Pray. It's such a relief to know that God is unchanging throughout this world of change that I am in. He is my rock through everything, and as long as I keep Him as my focus and not my wedding, everything will work itself out.
